It's SRAM wireless shifting. You can see him testing the shifters with the wireless controller on the bench at 9:00.
The brakes are TRP Hy-Rd hybrid mechanical/hydraulic disc brakes, with a hydraulic piston at the brakes which is actuated using a mechanical cable. They provide some of the advantages of hydraulic brakes (e.g. self adjusting pads) but you can use them with non hydraulic levers, like the compact aero levers fitted to this bike.
