Nah it's easy. Paintbrush tool, with magenta, set the blend mode to colour and paint that skin back in!
Seriously though that guy's got some chops. I might try it myself to see how challenging it actually is to get it looking authentic.

I bought a color retouching kit back in the 1970s
for a college photography class project - basically a thin oil paint wash that is absorbed quickly into the photo paper. Very tricky to get right, which is why so many old colorized post cards look so fake.

That looks great
but the great thing about it being in Black and white is you can imagine their skin looking deathly pale rather than rather ruddy cheeked.
