Vegetarians choose not to eat any kind of meat, like various religions choose not to eat Pigs or Cows.
We don't need to eat meat as a species, and being a veggie doesn't hurt anyone, but a lot of people who do eat meat feels it infringes on their masculinity or something and have to complain.

I think you'd struggle to find many vegetarians who haven't tried (and enjoyed) meat - certainly in the Western world - and enjoyed it.
