Step one
from the looks of things, get a camera that can do HDR costing about £3000.
Step two, spend another £1800 on a decent lens
Step 3, spend about £1500-2000 on the computer controlled tripod for doing the smooth pans etc.
Step 4, buy Adobe creative suite for more thousands of pounds then spend six months learning how to use it
Step 5, say bollocks to all that, get a free app for your phone that can automatically take images every 10 seconds or which can also make it into a movie, put your phone on a beanbag and set it off and wait.
Here is a list of some. It is the first list link from the search `time lapse app`.

quick and dirty hack:
step 6, glue a phone/camera mount to a mechanical kitchen timer from a pound shop for a periodic panorama - search sites such as hackaday and instructables for some cheap and cheerful diwhy ideas

or take loads of downers yourself?
I don't think getting the whole of Bristol on whizz is a viable strategy here.

You obviously have not visited.
Or you would see that already is the case, no work needed.
