I know those facts
but feel I am still missing the point of Shrek and Donkey being behind the camera

Apparently Rooney said, "What? What? Fucking what?" or similar.
In herman's pic, he's saying it in response to a cheeky wink from the cameraman, who happens to be Shrek.
Donkey is there because Eddie Murphey's contract stipulates that he has to be in every scene.

ummm...it just seemed like a good thing to draw/graff at the time?
Reminds me a few weeks back I was sat in the pub when a mate rang to give me a postcode, and I did that old trick of peeling a beermat to get a clean surface to write the number down. I then spent the rest of the conversation doodling on the remainder of the mat and I drew one of those masonic set-square V things (amongst other odd spikey shapes and 5 pointed stars((which I ALWAYS end up doodling))) It was only when I came back from the bogs a bit later I saw the barman clearing the table and studying the sketchedpad-beermat, then giving me a very odd look combined with a sort of "knowing nod" as I left... All very odd and easy to see how loony stuff spreads.
