Why put 'acids' in inverted commas?
What are these 'acids' really, eh?

That's generally what they're refered to as
but as far as my understanding go it's actually all the enzymes and stuff that do the mostdigesting, not the acidic nature of the juices, but I could very well be wrong with that.
