you can
just create a path along any line and have the text align to the path. Neat trick and easy enough.

pen tool
make sure it's set for paths and not shapes in the toolbar then click click along your line. This is automatically the 'work path' which is replaced by the next path you create so going into the paths layers and renaming the path to something else will make it permanent in the document. You can then do what you like with the path after that.
