seems to be very good and certainly espouses the use of a meat thermometer which completely revolutionised how I cook meat. I tend to stop the cooking before the recommended temperature as the temp will rise further during the resting period. resting is something I ignored for a lot of years (why would you let something get cold before you eat it?) but I've seen the error of my ways.
