You'll produce something that's more concise, more up-to-date, and you can adjust it so it's specific to the position you're applying to.

Also, most recent stuff first - I saw a mate's CV recently and by putting her education history at the top she was effectively making them wade through what she got in her GCSEs before bothering to tell them that she'd been doing this really scary big responsible job for the past five months.
