Their beer taps are too pressurised
so automatically make the 'enlarged head'. I know - I tried pouring a glass myslef and had to decant to get a decent Brit-Pint.

Actually
a large head on beer is the correct way to drink it. It's only cos we are so tight fisted that we demand a full pint with the minimal amount of froth possible.
