I just worked out a really great variant Thai Red Curry
Using Chicken Thighs (better texture than chicken breast) and cubed sweet potatoes, it goes really well.
Shitloads of Coriander, of course.

I've had a soft spot for the cheeky girls ever since my parents saw them in a motorway services shop choosing magazines. According to my dad they were dressed in identical tiny-top-and-hot-pants outfits with ENORMOUS overcoats on top and looked "A bit sad, really, but hopeful."
