I use Any Video Converter (free from Filehippo.com)this can download any youtube video (the full filename not the truncated version) and save it as an MPEG (doesn't work with AVI for some reason)
Then I use Jasc Animation Shop to convert the clip to a GIF. If it's a long piece of footage then I open it in 1000 frame sections, then cut it right down from there
