Go to the Optimize paletteand adjust the settings there... If you bring up the 2-up view, you'll be adjusting the one on the right, and this way you can see how much (or little) detail you'll lose.
Selective or perceptual usually give great color reduction, and drop an extra couple of K compared to Adaptive. Also, going Lossy works well...
