
Crocheting normally using one needle with a hook on the end, and kitting uses two needles with tapered ends -- In knitting, one of the needles often holds a complete row, which helps the knitter maintain consistent stitch size.
Also, Knitting is normally used for projects requiring less variation (sweaters, socks) while Crocheting is generally used for more complex items such as doilies (sp?).
Of course, there is a lot of crossover between the two as far what can be created.
