I thought that they started off green and ripened into the other colours

then they fall off, rotten. Very disappointed - now I know why :-(

It's just that different cultivars of the bell pepper plant have been bred to "stick" at a different colour on ripening, so you have peppers that have been bred to be yellow or orange or even stay green when fully ripe. I grew some "chocolate peppers" once that went dark brown, but they all started off green. Typically in the supermarket green peppers will be cheaper than red because they're immature red peppers that have been harvested early.
