They Steam-melt the cheese on to the burger. It's a nice touch. and it's a lot more yellow than in that photie.They really are rather nice. And they have proper French's mustard, too.
Edit: in more cheese related news, they might have been using a custom-made one from a place just by London Bridge, which is a sort of a cross between Halloumi & Cheddar, and is fantastic.
