Don't skip them, they're the Rincewind books. They're ace.
But he does have a few standalone books which are good to start with, I suppose. Maybe read Mort first and then The Colour of Magic + Light Fantastic.

I find that
The Colour of Magic
and
The Light Fantastic
while ace, don't fit with the other discworld books. The style is a bit less developed and seems to hold onto more traditional-fantasy roots.
