ah, fair enoughI see what you're getting at. I think it perhaps depends on how it's cooked. Kidneys that are in stew fill up with juices and are boiled, so their texture is not pleasing. Fried kidneys or chicken hearts are good, and liver should be grilled for best results, with a bit of lemon.
