who has owned restaurants for 20 years including 10 years on the Strand in London and he put me on to Sabatier knives about 15 years ago.
More than capable for the professional or home use and not ridiculously overpriced.

I'd be more inclined to suggest these for home use. Paying £500 for a set of knives is something not even most professionals will bother with.
