I really like the idea of Thai food...but I can't stand coconut. Why do they take all this lovely sharp aromatic joy and then smother it in bland sickly gip?

I'm making a hot and sour prawn and mushroom soup today.I got a pack with 10 different kinds of mushroom, chinese cellery, fresh prpper corns and of course chillis, soy and fish sauce.:)
