The fact he can reuse the salt makes it even more impressive. I'm wondering how hard it would be to turn it into a continuous process - that feels like the obvious way to automate it.
My guess would be that the water requirements could be a problem unless there's an unlimited supply nearby - a river or stream could also provide the mechanical power needed to drive the mechanism.
If there's no water supply you'd need to recover the water evaporating from the salt recovery process. A cold surface would help. Oh, wait...

The name rings a bell. Isn't that the oxidizer in gunpowder and a lot of solid rockets? Keep it away from anything that has a lot of calories. Water fine, apple juice, maybe not. Getting sugary goodness into it, accidentally, might well lead to more excitement than you would want while scraping it up.
