OK, time for a retarded question
How come when he pours it into the tray it doesn't freeze instantly until he touches it, but then when hes pouring it later on it does?

I think, anyway.
You get the same with reasonably pure water in the freezer, provided it's in a scratch free glass container.
Same applies to hot water turning into vapour and clouds turning into rain.
