Next time, try some decent crispy hash browns. I always go for the hash brown option (as an extra, obviously, not instead of the toast/chips/fried bread) when available and it works a treat.

FWIW my abiding memory of croquettes is of them being utterly vile with or without egg. Like eating hot, crunchy cotton wool.
