that you like her as a friend, but aren't sexually attracted in which case stay Friends Without Benefits.

I'm all for being friends and having a lot in common with the person you're with. I don't think you can have a proper relationship without that. However if you are entirely unattracted to them, it's not going to work.

However I have noticed that the more you like someone, the more attractive they become in your eyes, so maybe that'll start to happen

I do really agree with this. You could have a lifelong great friend on the cards, may be worth not spoiling. Maybe just give it some time and see what happens :)
