as has been said, roo meat is very leanthe stallholder will most likely have mixed a fair bit of fatty pork in with it to stop it drying out during cooking. if you want the real taste of kangaroo, find the closest butcher to you that sells it and cook it yourself. that way, you know it hasn't been messed with.
