Another way to do thisis to draw a line on the floor and lie the chicken down with its neck along the line - it will be immobilized. I think this is useful when you have to transport a small number of live chickens and you don't have a box or sack handy. My father also taught me how to hypnotise a pig - you just lie it on its side and tickle its tummy. Equally useful as hypnotizing chickens.
