is mildly lactose intolerant, so I tend to have to use soya milk in cooking and stuff, but it makes perfectly good batter and custard and stuff so I don't mind too much
elmlea is a reasonable substitute as well.
@k2k6: in my view you can't beat fully cream-laden milk (almost) straight from the cow.
Pasteurisation has it's place, but it destroys some of the goodness
I vageuly remember hearing that they skim all the cream from the milk and then add controlled amounts back to make the varieties. is that what you are referring to?
