@ViprosMilk (someone told me on here) has its cream skimmed off, which is then passed through tiny apertures to break down the fat into small enough globules such that they remain in suspension in the milk rather than floating to the surface.
The amount of cream added back depends on whether the milk is to be sold as full cream or semi skimmed. But apparently even blue milk has much less cream than milk ex-udder.
