I used to do this kind of thing
Across the first letter of each paragraph of an essay at univeristy, for example. Going down the left hand side of each page it was possible to spell out a message for a keen-eyed lecturer. Reading them in order was sometimes a little obvious so if I knew the person marking it had spotted one of my acrostics before I'd try something different. Every other paragraph, maybe. Equally fun.

Speaking as someone who's marked his fair share of essays,
if I spotted something like that I'd deduct 10 marks for smartarsery.
