For a good old school then The Magnificent Butcher with Sammo Hung is great
Jet Li's Once Upon A Time series and Fearless are also good.

Iron Monkey is a good ninjaish film, even though it's not about ninjas and set in China.
I don't think there are any good Ninja Films. Gold Ninja being one of the worst films I've ever seen.
