does anyone know a way to convert Youtube videos to GIFs?

though there are lots of third-party sites that can do it at varying resolutions, some free, some not, take your pick

I saw one named GIF Soup, but you had to register and it left an ugly watermark at the bottom.

I'll have to try importing the video into Photoshop somehow.

I use flvtoavi.exe to convert to MPG

then import into Photoshop, then edit and save to gif or whatever.
