since I had an ST, sorry...
I do know Sound Recorder only allows you to record in 1-minute lumps, but you can get around that by making a big wave file and re-recording over it.

Not tried it myself
but have a look at Audacity and see if that helps.
Alternatively, you could aquire, by hook or by crook, a professional sound editing package, such as CoolEdit or Sound Forge.
