Showing my ignorance, are the cells printed able to grow or would they stay at the level of development they were at when printed?

depends on the type of cells I suppose.
If you had stem cells and a bloody clever printer you could print each different cell separately. Though I imagine it will be used for skin/heart tissue for minor repairs.
