I've been on and off the board through the day and have seen your various updates on your bready adventures
Should you not be so ill now that the very idea of having more bready adventures doesn't make you want to puke all your innards out I'll say this- Fresh yeast.
My mum has a bread machine she never used because all her bread turned out stodgy, but on reading up on various recipes once I figured out this stupidly simple thing. It really works too, use shelf yeast and it's like a brick, use fresh (and it has to be VERY fresh) you get lully light, yummy bread. Just thought I'd share :)

stodgy, too true
fresh isn't the easiest thing to get hold of. mind you, haven't tried yeast.com yet.
