Well, I'd personally

recommend going for something a bit older than the current 'favourites' - basically, you can get really great images out of anything 6+ megapixels, be it Canon 10D, Canon 20D, Nikon D70, Nikon D50. All are rated for more photos than you could think of taking, I guess the only problem is batteries, just make sure you have a few new ones. Move to DSLR, even if it's old and cheap (£400 would get you something excellent) and you'll be amazed by how shit everyone else's photos are.

Oh, and of course

the 300D and 350D will kick the arse out of any point-and-shoot, just make sure you get a decent lens

I'd say that no matter how much you're tempted, buy the cheapest DSLR you can, and the most expensive lens - the difference from 6 - 8 mpx is nothing, but standard - L lens (for Canon) is just enormous. Go for it, and good luck!
