take a photocreate a text layer and duplicated it as many times as you want for the various colours/shades of grey. Make the text into the colour you want. Rasterize the text layers. Then it's a process of selecting an area of colour to match a layer and then inverting that selection. Repeat for each layer and create one bottom layer of white. Job done. No trace of the original image is left :)
