Most of abundant nasty stuff decays pretty quick smart though (Iodine-131 has a half-life of 30 days).
I base all my knowledge on the Lenin Chernobyl NPP though, so this doesn't all apply.

Little animals all have a small amount that they absorb from the environment.
Large animals have that, but also the small amount from each little animal they eat.
Bigger animals eat the large animals and the small ones as well as having the small amount from the environment.

have what's known in laymans terms as "dead man's fingers" which are effectively gills or filters for all the shit that they breath from the water. these are poisonous at the best of times and must always be carefully removed, so one can imagine that crabs that are filtering radioactive isotopes will pick up a decent amount of radioactivity.
