in engraving, you cut into the wood or metal, and force the ink into the cuts. the stuff i do is the reverse.... you cut, and ink up everything thats not cut. But yes, its done by cutting onto a block of wood.

sketched it out in pencil, cut, mixed the ink and there we go. my attention span does not allow for much more than that. That one was fairly simple.
