Are you meatloafing it?
chuck a few drops of cochineal in the beef as you grind it to give a good contrast. I don't know of a yellow food colouring to use. Yellow never looks appealing unless it is Jelly. Actually not even then.

Very finely chopped meat, slow cooked and left to set in moulds with gelatine
