The one I usually do is to make up something completely unprovable and personally offensive to the person and then tell them it's true.Then when they disagree tell them to present proof despite the fact you don't class any proof as 'really knowing'.
claim that there can be no true proof for the existance of god = god exists, I generally claim that jesus or some religious figure was gay, then insist that they should present incontrovertable proof if they disagree.
