# Pancreas,
unlike other organs such as liver,
kidney, and heart, is soft and cannot be held
in a rigid and fixed position for effective
dicing in a mechanical slicer. Therefore, the
best way a mince the pancreas without
shredding or crushing it seemed to be to use
a rapidly rotating blade such as that in a
Polytron homogenizer.

# Therefore, with pancreases
from large animals, it is all the more important
to have a method to rapidly mince
the tissue into uniformly sized pieces without
damaging it with a lengthy handmincing
procedure and without destroying
it as many blenders would.
