when I worked in the scrub in WA some blokes would go out gathering them
if you wanted to eat them you'd go mid may. otherwise they can get a bit bony if you get them later.
One thing to mention that to get them you almost always have to chase the male emu off the nest (the hen just lays them and fucks off), and they really dont want to go. Egg hunters with a hunting licence will just shoot them (technically illegal unless it's private property, but laverton had 3 cops for a police district that's almost the size of britain), or more commonly set their dogs onto them, or just drive your tojo at the nest. occasionally you might come across an unoccupied nest if the male has been taken by dingoes, but it's pretty rare
