Haweswater Hotel
Me and the Ex stayed there a few years back. It's gorgeous, set on lake Haweswater near Shap in Cumbria (which is also beautiful countryside). Golden Eagles fly overhead, it's absolutely isolated and we only saw one other person + dog the whole time we were there over Christmas. The hotel is basically as you described above, with a log fire etc.
The hotel is pretty decent too, considering it's the only choice in the area. Not cheap, but not so expensive for a man of your means.
