Mmmm...Iberico ham
Love it. I think Spanish food is underrated - it maybe lacks the supposed sophistication of Italian but I'll take Iberico or Serrano over Parma any day.

Yerp, sorry.
I might do a "best" answer in a bit, I need to have a think. There's a place in Madrid called "The Palace of Meat", it serves nothing but ham tapas (and alcohol, obviously)

I've spent many happy a night in there. There's a little chap working behind the counter who is like a cockerel, all strutting energy and flashing eyes, who likes to dazzle the laydees with his zorro-esque knife skills, theatrically slicing off shards of finest ham, in the apparent belief it'll get him laid (and what do i know, maybe it does).
i watched him get it wrong one evening, and slice his finger. I thought he was going to stab me when i honked with laughter....

Can't remember, but it's near the main square, I think. We also went to a place that specialises in seafood tapas - deep-fried mini squid, braised octopus in paprika etc... magic.
