Web filters
I set up a filtering web proxy at work to stop the oiks from watching porn and gambling and what not. I asked my assistant to test it and see if he could through. 3 hours of hacking away and he reported it was working extremely well, no dodgy sites were seen.
When he went for lunch I printed the list of dog porn sites he'd been trying to get at and left it on my bosses desk as a 'report' of what he'd been looking at on the internet. Happy days.

We had a contractor working over a weekend
...at stupid amounts per hour. On monday morning he arrived to see a printout on his desk: a list of all the porn sites he'd visited over the weekend while supposedly working.
He was contracted because of his alleged Mad Skillz, but clearly they didn't extend to the knowledge that the sysadmins can see what you've been up to...

On dull days I'd surf the proxy logs. It was interesting (on an amateur psychology level) to see what sites certain people went back to. If it got a bit much and some sites got a but over the top, I'd fiddle the DNS a bit.
Worst bit was the main offender was a maintenance dude who dressed like a hobo and his beard was yellow with nicotine, he never washed. Anyway, one day a casual was set up on his PC as we needed bums on seats and she found a bottle of lotion in the desk drawer. Ewwww....
