Only today
I tried to make an omelette with cheese and onion.
Was nice scrambled egg I ended up with.
Think I'll stick to boiling or frying in future!

It can be done
You just have to let your omelette take shape a bit first then sprinkle on grated cheese. My own preference is for gruyere. The best omelette technique is thus: Use butter, not oil. Make sure eggs are well whipped with a wee bit of milk and s&p. Put egg mix into pan just as butter melts. Once base is resaonably solid, add cheese. (If you want onion in, better to fry it in the butter first then add egg mix). Then place under the grill until top browns and looks really cool. If you want to show off a bit, place a plate over the pan and flip then replace in pan for further browning.

even better, fry some chopped up bacon first. Drain fat wash frying pan, add butter to frying pan, 3 eggs whisked into frying pan, throw in grated cheese and bacon bits.
once half cooked - whack under preheated grill.
this all takes approx 6-7 minutes to cook. And its ace with Ketchup.

ok - what you are talking about is not strictly an omelette. It's a tortilla.
to make an omelette - butter in medium pan - not too hot or it'll scorch.
eggs, milk, S&P
put eggs in pan. swirl pan. allow eggs to cook a little.
with a palette knife, lift edge of cooked egg. Tip pan to let raw egg on top run into base of pan. Repeat .
when top layer is still a bit liquid, fold in half and serve. the heat in the omelette will cook the egg, personally i prefer it a teeny bit runny. If you want to add cheese, grate it v.finely, and add just prior to folding stage.
easy.
