Probably because the egg would not cook properly
A soft-boiled egg takes at least three minutes in water which is already boiling.

A kettle doesn't take that long to boil - and when it hits boiling point, it switches off and starts to cool.. so it would take even longer if you just left the eggs in there for a few more minutes.

There was a time when kettles would not switch themselves off.
And you had to get up to change the channel on the telly too.
