Re knives: I've got a Victorinox Cyber-Tool. Also have a Victorinox Swiss-Champ.
Re knifefights: Best defense from a knife attack is to put on a wristlock and keep the knife as far away from you as possible. Only do this if you know what you're doing and you've had lots of practice.
