I and my colleagues have quite a lot to do with research ethics committees. If there was an experimentally valid reason why only righties could be used, there ought to have been no problem with advertising for righties only. If there was no scientifically valid reason - say, if it'd've meant having to go to the hassle of booking a different room - then fair enough.
Possibly a case of "half-a-story" and/ or the admin people getting unwarrantedly jumpy.
