I have dried ancho, cascabel, guajillo, de arbol, smoked ghost, chipotle, pasilla, some Chinese 'facing heaven' ones, fuckloads. Canned chipotles in adobo are great for con carne.
Fresh ones bought as required, finger chillies for Indian, bonnets for jerk.
